Our Christmas day started with a sneaky gift to Leslie. I was able to buy a pair of dog socks and a card on the one day that I was out without her. I kept the secret for two weeks and surprised her Christmas morning. We had the day planned out and put the turkey into a brine right after our breakfast. It was not completely thawed so the brine was going to help with that. The turkey would be going into the oven at 3:30 and cook for 2.5 hours and we will have our dinner. It was a tiny turkey, only 6 pounds but just big enough for us. One slight problem we had was with the oven's temperature controls. The only temperature that mas still marked on the knob was 250 C. We needed to cook the turkey at 180 C so I had to estimate where 180 degrees was on the dial. We slid the turkey in and decided to take a walk on this very fine day. It was so nice that we were out for an hour and a quarter. We got back to the smell of a very crispy turkey. Apparently my guess at the temperature was way off so the turkey was already overdone on the top and undone on the bottom. Fast forward to 7 PM and we had a lovely dinner with turkey, mashed potatoes with gravy, stuffing balls and Swiss chard. The top part of the turkey required extra chewing but the gravy and everything else we had a fine Christmas dinner.
