A great dinner at El Baqueano

El Baqueano is on Chile Street. I am not sure if it is the country or the vegetable. But I am sure that it is the location of one of the finest meals we've had in South America. From the wine pairing, to the presentation of the dishes, to the ingredients of the dishes, to the absolute flavors of the experience.  We took a cab to the restaurant  and got there perhaps 10 minutes before they opened. We stood outside for a while but as we are warm blooded from Miami we got too cold. So at 5 till we started ringing the front doorbell. They took pity on us and let us in early period Yeah!  They had a tasting menu with 9 dishes, but this time it was really only nine dishes. Those extra snacks add up. The dishes that stood out the most were A) a raw llama dish with red black and gold quinoa B) Rock from the sea which included a fish in a black ink panko with algae cake and kale C) Wild boar sausage with kimchi D) buffalo-meat with potatoes, and E) perhaps the best was a shrimp in a coral Emulsion with garlic chips.  The co-owner /sommelier / wife of the chef was so personable and very sweet we had a great time talking to her and Alfredo sommelier was delightful indeed.
