We had dinner reservations at Demo
for 7PM We got there a little early because we wanted to take a nice walk and didn't know how long it would take. Lots of Finnish architecture along the way . We got to see where our original Airbnb would have been. We certainly have a better location at the one we have now. At Demo we were faced with the classic fine dining conundrum. Do you get the seven course meal or the five-course meal. What you never know is how many courses are not included in the number. There always seem to be snacks and desserts that are not included. Our 7-course meal was really 10 so the 5 course, if it was 8 would have been plenty. This kind of math is not easy to do after happy hour. So we erred on the side of hunger and got the seven course meal. I did learn long ago not to do the wine pairing. Those folks at the restaurant that did the wine pairing were a great source of entertainment for us. After five or six glasses they started to act silly. As alcohol usually impairs your judgment one group decided to have an after dinner drink as well. That was one Herculean task.
Our dinner started with a bread dish. Tiny buns were cooked around and onion interior. Then we had ham melon and balsamic vinegar but the ham was aged for 8 months and the balsamic vinegar for 30 years. We got mackerel with melons and sun-dried tomatoes we had a glazed bike with sauerkraut peas and three types of row rainbow trout white fish and lump fish, we got a dry aged beef with sweetbreads and tripe with a ragu of veal tongue and kidneys with asparagus and polenta we had a me no cheese that was found with the old cracker and grated cheese on top, we had lingonberries with Elderberry sauce and creme fraiche and then we had a rhubarb mousse with chocolate three kinds of rhubarb and then we had to get home which took a while because we were so full

The interior of Demo
There are two buns and the rest are rocks. This reminded us of South America where they served us to a dish that had two items that look like rocks. The waiter said one is a rocking one is not do not eat the Rock

We were already getting full and the waiter brought out three new sets of silverware. That means there's three more courses, oof
This was a cheese selection. It was a French me no foam to cheese on the bottom with a buckwheat cracker and grated cheese on the top
