We drove down from the villa to Cyann. It is the closest restaurant to our villa, just a hard left at the base of the hill. That does not provide much visibility of the area you are turning into. I executed this turn cleanly but suddenly there is a bike pulling into the track in front of us. It's our buddy Mac the sommelier with a bottle of wine in one hand and the bike handle in the other. This was a surprise for everyone! Mac's uniform is black, the island is very dark my night vision isn't all that good. Thankfully the buggy does not go all that fast. We all let out a gasp and he was off and we were in for dinner. Based on our research we had high expectations going into this restaurant. These expectations were met and exceeded. We had the best service from the entire staff. From Nicolas the manager to Mac the sommelier. I ordered Quail three ways and Leslie ordered Red Snapper with slipper lobster. The fish and the lobster were very good. I got a bite of the lobster so I can add a new item to the famous "carnivore list". The quail was from Chile and was prepared excellently. Leslie and I were wondering what three ways it would be cooked: baked, deep fried, wok fried, sous-vide or what. It turns out to be well done, medium and rare! Very tasty and quite satisfying.
